
Hello ACP!! Welcome to the first edition of Cooking With Kay! On the menu today is one Kay often creates when hosting parties or events. We will be cooking a Pecan Crusted Chicken with a Honey Dijon Mustard Drizzle. Without further ado let’s get started!

Our Mascot

Ingredients:
You will need:
1/2 oz of Pecans
1 TBS of Fry Seasoning
2 TSP of Honey
10 oz of Chicken Cutlets
1/4 Cup of Panko Bread Crumbs
2 TSP of Dijon Mustard
2 TBS of Mayonnaise (Kay added extra because she loves mustard)
1 TBS of Butter
1 TBS of Olive Oil
A splash of Cooking Oil
Salt
Pepper
Instructions
- Preheat your oven to 450 and finely chop the pecans.
- I kept them in the bag and crushed them with a rolling pin.
- Place 1 TBSP of butter in a bowl and microwaved until melted (about 30 seconds). Then add in your pecans, panko, half of the fry seasoning (rest is used later), a drizzle of olive oil, and a pinch of salt and pepper. Then MIX!
- In a small bowl combine the mustard, mayonnaise, and honey.
- I realized my honey was crystalized so I had to use Honey from a Bachelorette Party and my name was on the jar haha. We improvise.
- Add light oil on a baking sheet then take the chicken out and pat dry with a paper towel. Use the rest of the fry seasoning on both sides of the chicken and salt and pepper. Place it on the sheet! Evenly spread the honey sauce on the chicken (only about half because the rest will be used during serving) and add the pecan mixture on top. Only the top is fine!
- Place in the oven for 15-20 minutes
- Remove from oven and let cool. Then drizzle the rest of the Honey Sauce on it!!
Extra
You always need a side so Kay gave the audience the option of Fries or Rice.
The vote was easily to get fries (crisps for the British).
They drove to Freddy’s for their classic fries, with the sauce of course.
